Wild n Fresh SALMON
Cedar Plank, WILD Sockeye
I absolutely LOVE cooking salmon on a cedar plank. You get a nice smokey flavor from it, along with cooking the salmon evenly.
Cedar Plank Prep:
You can get cedar planks from some grocery stores, and even some Costco's carry massive packs of them.
Submerge and Soak in a clean tub/sink for at least a couple hours
Salmon
- Squeeze some juice from a lemon on the salmon (helps protect from grilling process)
- Lemon zest
- Rosemary
- Fresh ground pepper
- Course, unprocessed sea salt or Himalayan salt
- Light dash of balsamic vinegar
- Light dash of smoked paprika
I tend to cook closer to a medium heat to avoid any charring of the meat or fish.
Check after about 10 minutes, as the timing will differ based on how thick your cuts are, the grill, how big of a plank you have.. The fish will be done when it easily flakes off in chunks and does not just mush away when prodded with a fork.
No cedar planks?? That's totally fine! Grilling the salmon will still work, may need a little less time without the plank.
No plank OR grill? Still fine. Bake with the veggies. Same temp as veggies. Check after 8-10 minutes.

Roasted Veggies
I would not recommend roasting your veggies every day.. but they are a nice treat from time to time.
You can roast all sorts of veggies, but here's a sample of what you can do:
~In a large mixing bowl~
- Broccoli
- Cauliflower
- Green/yellow zucchini
- Red/sweet onions
- Garlic (chopped or whole cloves)
- Enough grapeseed or melted coconut oil to coat veggies
Add spices (This time it was more of a herbal basis)
- Rosemary
- Tarragon
- Garlic powder
- Sea salt/Himalayan salt
- Course black pepper
Mix everything in bowl and spread out on baking sheet
Bake at 400 F for about 15 minutes. Maybe a touch more if you have a ton of veggies and/or baking salmon with them.
Baked Sweet Potato
My goodness do I love sweet potatoes. I try to limit myself to having these starchy buggers to every once in a while, but they are a delicious treat.
BUY ORGANIC
Rinse well and poke a few holes through.
Usually I would bake them at a lower temp for longer (~375 for about an hour, unless they're massive),
but with the veggies at a higher temp, the sweet potatoes may not take as long.
Start these before everything else. Just turn the oven on and pop em in. They'll be done when a fork or pointy object easily passes through and the skin starts to pull away from the inside.
Sprinkle a little cinnamon on (to aid in blood sugar stabilization of course!) and Enjoy.
