mmmm Pumpkin Fudge Bars
Perfect Seasonal Treat!
Pumpkin Base
All organic ingredients of course!! Big surprise right...
- 16oz Pumpkin Puree (I avoid pumpkin from a can, or anything for that matter)
- 1/3c Coconut flour
- 1/4c Coconut milk (optional, gives more of an ice cream texture when finished)
- 1/3c Coconut Oil
- 1-2 tbsp grassfed butter
- 1/2 tsp cloves (touch less)
- 1/2 tsp nutmeg (touch less)
- 4 tsp cinnamon
- Sweeten with: 4 pitted dates, 3-4 tbsp raw/organic honey. OR ~8 drops liquid stevia. I prefer just a few drops stevia to a couple tbsp honey. I also added 1/2 very ripe banana.
- (optional) Chopped walnuts or pecans, flax seeds, chia seeds
Place everything in a food processor/blender and let it rip! Spread the resulting creamy mix on a glass pan, or parchment lined pan and place in freezer for about 2 hours.
You can also implant a handful of organic raisins in the mix!
Then top with:
Chocolate Fudge
Same Idea as my "Truffles"
- I would recommend making the "superfood" version :)
Place back into freezer for about an hour, or until the mix and fudge topping has solidified.
Garnish with... hemp seeds, coconut flakes, dust with coconut flour, cinnamon, etc.
This dish is loaded with superfoods that will help keep you and your family healthy through the winter months! I have way to much to say on this topic, so I'll leave it there, for now.
