Pizza Time!

I seriously enjoy destroying every excuse people give me... and giving up pizza is definitely towards the top of the list.

Don't think you can give up pizza?? Don't have time, money, skills, money, patience, etc etc etc blah blah blah??     Excuses... CRUSHED.

It's time to reward your body and soul!!


Crust

  • 1 cup almond flour
  • 3/4 cup ground flax meal
  • 1/4 tsp aluminum free baking soda
  • 1/4 cup pumpkin seeds
  • 1/2 cup walnuts(optional) 
  • 1/4 cup melted grassfed butter 
  • 2 tbsp grapeseed oil
  • 2 organic, pasture raised eggs
  • ~1/4 C water
  • Crushed Red pepper
  • Black pepper
  • 1 tsp of pink salt
  • Herbs, garlic as desired
    • I used freshly picked basil and tarragon.   Rosemary, parsley, thyme, etc. 
In the food processor, crush and mince the nuts first (you could probably get away without even using nuts in the first place...).  Add in the rest of the ingredients, with the melted butter last and blend everything together.  Roll dough onto a baking pan of sorts that is lined with parchment paper.  When using almond flour, a thinner crust typically works better, but I'll leave that up to you!  

Bake at 350F for 12-15 minutes.  Dough should be somewhat firm and slightly crispy.  Then it's time to move on to the glorious toppings!! 



Toppings

You really can get wild and try all sorts of things.  But, this is what this particular pizza entailed... 
  • Organic, so sugar added, tomato/pasta sauce
  • Spinach
  • Mushrooms
  • Freshly picked tomatoes 
  • Organic sundried tomatoes (stored in olive oil with no sugar/weird additives, etc) 
  • Freshly picked basil leaves
  • Raw, grassfed, unpasteurized cheese on one half
  • Raw, Pasture raised goat cheese on the other
  • Garlic
  • Onions
  • Pasture raised/free range, yada yada... MEAT (if your heart desires)
Slide the pizza back into the oven for another 10-12 minutes or so.  I would recommend adding the basil and spinach later to avoid over-cooking these precious buggers.
