Nana Bread!!



This is quite the tasty treat that won't last long!



Ingredients


  • 1/2 C coconut flour
  • 1/2+ C almond flour
  • 3 very ripe bananas 
  • 1/2 C melted grass-fed butter and coconut oil mixed (melted) 
  • 1/3 C cacao nibs
  • 1 tsp cinnamon
  • 3/4 tsp aluminum free baking soda
  • 4 organic, free-range, eggs
  • 1 tsp vanilla extract
  • pinch of pink salt
  • optional::  chopped walnuts (1/2C), dash of almond extract (careful!), 1/4 C coconut milk, pure liquid stevia or grade B raw maple syrup or Raw-organic honey (which is what I prefer), pre-soaked chia seeds, hemp seeds.

Instructions

  1. Preheat oven to 350F
  2. Grease a 8.5 x 4.5 in pan with grass-fed butter or coconut oil. Line with parchment paper
  3. Combine all the dry ingredients in a medium bowl and mix together 
  4. Whisk/blend together eggs, vanilla, honey together in a separate bowl 
  5. Mash ripened bananas together separately, then add to the liquid mixture and blend. 
  6. Pour liquid into dry and blend together.  Stir in melted butter/coconut oil and honey until the mixture is a consistent bater.  Let the bater settle a bit and harden as the coconut oil/butter mix will start to solidify at cooler temps.  
  7. Pour into loaf pan and spread out evenly.  Place into oven.  
  8. Bake for 45 minutes (although it took me closer to an hour)
  9. Your masterpiece will be complete when a toothpick comes out clean after piercing.
