Nana Bread!!
This is quite the tasty treat that won't last long!
Ingredients
- 1/2 C coconut flour
- 1/2+ C almond flour
- 3 very ripe bananas
- 1/2 C melted grass-fed butter and coconut oil mixed (melted)
- 1/3 C cacao nibs
- 1 tsp cinnamon
- 3/4 tsp aluminum free baking soda
- 4 organic, free-range, eggs
- 1 tsp vanilla extract
- pinch of pink salt
- optional:: chopped walnuts (1/2C), dash of almond extract (careful!), 1/4 C coconut milk, pure liquid stevia or grade B raw maple syrup or Raw-organic honey (which is what I prefer), pre-soaked chia seeds, hemp seeds.
Instructions
- Preheat oven to 350F
- Grease a 8.5 x 4.5 in pan with grass-fed butter or coconut oil. Line with parchment paper
- Combine all the dry ingredients in a medium bowl and mix together
- Whisk/blend together eggs, vanilla, honey together in a separate bowl
- Mash ripened bananas together separately, then add to the liquid mixture and blend.
- Pour liquid into dry and blend together. Stir in melted butter/coconut oil and honey until the mixture is a consistent bater. Let the bater settle a bit and harden as the coconut oil/butter mix will start to solidify at cooler temps.
- Pour into loaf pan and spread out evenly. Place into oven.
- Bake for 45 minutes (although it took me closer to an hour)
- Your masterpiece will be complete when a toothpick comes out clean after piercing.
