RAW Coconut Macaroons
Prepare your taste buds to be Nummmified
So easy, you can even trust that other person in the house, who happens to come at the most convenient time, after the goodies have been made, and everything has been cleaned and put away... to sample your latest creation.. to make it. Yes, it is your turn to sit back and enjoy the show.
Ingredients:
- 3 Cups organic, unsulfurized (yes, that's my term) coconut flakes.
- 1/3 cup organic, virgin coconut oil
- 1/4 cup dried organic blueberries/cherries/strawberries/banana/mix of everything
- Ideally, freeze-dried works best. But, they may be hard to find/over your (my) budget.
- 3 tbsp grade-B organic maple syrup and 1 tbsp raw, organic honey
- Dash of Himalayan or sea salt
- 1 tsp vanilla extract
- (optional/recommended)
- 2-3 tbsp chia seeds and/or hemp seeds
- Handful of raw, organic cashews
- Several tbsp of coconut flour, or to desired consistency.
ALL(except for the coconut oil) from the local market!
Blend 'er up!!
Seriously though-- toss it all in a food processor (ideally), or blender and blend until you're happy with the consistency. It should be rather dense, and capable of rolling into a ball. Add more flour if it's a bit soupy.
Roll mixture into bite sized balls, and place in fridge or freezer. The coconut oil will solidify, rendering you in the position of having the tastiest balls on the block. Do with them what you wish.
